Bouzigues Oysters

Bouzigues is a small village on the northern shore of the Thau lagoon. When you arrive, you see the oyster tables lined up on the water, the tasting shacks along the road, and people sitting outside in front of platters of oysters. That’s it. Simple. And very good.

From Florensac, it takes 20 minutes via the Mèze road. It’s a trip we recommend to all our guests.

Why they’re different

Bouzigues oysters are raised in the Thau lagoon, a saltwater lagoon separated from the sea by a sand bar (the lido). The water is warmer than the open sea and richer in plankton. The oysters grow quickly and well.

The result: plump, full-bodied oysters, with a pronounced but not aggressive briny taste. They’re less salty than open-sea oysters (from Brittany or Normandy). People often say they have a slight hazelnut finish. That’s true, especially in winter.

The mussels from the Thau lagoon are raised the same way, on ropes suspended from the tables. They’re small, very flavourful, and available from roughly June to February.

Where to eat them

The oyster farms of Bouzigues

This is the classic experience. You sit down directly at the producer’s place, usually in a wooden shack facing the water. You order a dozen (or two), a glass of Picpoul de Pinet, and watch the sun on the lagoon.

A few well-known spots along the route des parcs:

  • Le Mas de Bouzigues: family-run shack, good value
  • Chez Cathou: small, popular, better to arrive early
  • Le Récantou: a bit bigger, shaded terrace

Prices vary by season and size, but expect 6 to 12 euros per dozen. Much cheaper than Paris.

Mèze, the alternative

Mèze is right next to Bouzigues (5 minutes by car). The harbour is pretty, there are several seafood restaurants, and it’s a bit less touristy. On Thursday evenings in summer, there’s a night market at the harbour with oyster stands.

Florensac market

On Tuesday mornings, there’s a fishmonger at the Florensac market who sells Bouzigues oysters. Cheaper, and no driving needed.

How to eat them

Here, we eat them raw, plain, with just a squeeze of lemon. That’s the most common way. Some people add a dash of shallot vinegar, but purists think it masks the taste.

Warm oysters (grilled or gratinéed) exist in some restaurants, but it’s not the local tradition. The idea is to taste the lagoon in the oyster.

For wine, Picpoul de Pinet is the obvious choice. Dry, crisp, with an acidity that balances the saltiness of the oyster. The two have gone together for centuries, and for good reason.

The season

You can find oysters year-round in Bouzigues. The “months with an R” rule (only eating oysters from September to April) is outdated. Thau lagoon producers raise triploid oysters that are good in summer too.

That said, the best ones are between October and March. The water is colder, the oysters are firmer, and the flavour is more concentrated.

The Thau lagoon museum

In Bouzigues, there’s a small shellfish farming museum (musée de la conchyliculture). It’s modest but interesting if you want to understand how it all works. You’ll see the farming techniques, the history of local oyster farming, and there’s a terrace with a view over the lagoon. Entry around 4 euros.

  • Tip: go late morning, before the lunch crowd
